Brownies! I love me some brownies. Anytime my family and I go out to eat we our top pick for dessert is a warm brownie topped with vanilla ice cream. I’m drooling just thinking about it. Since we love brownies I thought why not make a cookie out of it? That’s where the idea for these Brownie Cookies came from!
These cookies live up to their name. They seriously are just a brownie in cookie form. They’re crispy on the outside and soft and gooey on the inside. Eat these puppies right after they get out of the oven…..oh man! Nothing like it! Or wait until later and dunk them in a tall glass of cold milk! Either way you won’t be disappointed with these Brownie Cookies. They might be your new favorite way to eat brownies! If you give them a try let me know how you like them! Enjoy!
Thick, rich, crispy on the outside and gooey on the inside, Brownie Cookies!
- 16 oz dark chocolate (I recommend Ghirardelli 60% cacao chips)
- 1/2 cup butter
- 1 cup flour
- 1/2 teaspoon baking powder
- 1 cup brown sugar
- 1 teaspoon vanilla extract
Preheat oven to 350 degrees. Line a large cookie sheet with parchment paper
In a microwave safe bowl, melt the chocolate in 30 second intervals, stirring after each time, to prevent burning
In a microwave safe bowl, melt the butter
In a medium sized bowl, whisk together brown sugar and eggs. Add in chocolate, butter, flour, baking powder, and vanilla extract
Using a cookie dough scooper or spoon, scoop about 3 tablespoons of dough for each cookie, onto to cookie sheet
Allow cookies to bake for 14-15 minutes. Let cookies cool for 10 minutes before placing on cooling rack
