The thing that comes to my mind when I think of Chipotle is Burrito Bowls. I don’t know about you but that’s basically all I’ve ever gotten from there. There’s just something about all the filling of a burrito sitting in this bowl in all this glory just waiting for you to dive in. Delicious right? Well how about we take all of that delicious filling and stuff it into a vegetable? I present to you Mexican Zucchini Boats. These Mexican Zucchini Boats are packed full of flavor and they’re super easy to make.

Imagine you’re at the line in Chipotle. What’s the first thing they ask you? Brown or white rice right? Well with these Mexican Zucchini Boats you have that choice as well. I’ve made numerous times with brown rice but the last time I made them I substituted the rice for riced cauliflower and broccoli. Nobody in my family could tell the difference. That’s saying a lot because my dad is very weary of anything that’s remotely healthy lol. So the choice is yours! You can go with rice or do the riced vegetable. The easy thing about the riced vegetable is that you can get the steamable bags and be done with it in like 6 minutes. Easy peasy. Next is your beans. Black beans all the way! Now choose your meat. My dad, being the carnivore that he is, just HAS to have meat in every meal that I cook *eye roll*. My mom and I opt out of meat with these but if you need it like my dad they’re super delicious with chicken or ground beef/turkey. I imagine they’d be good with steak too! After the fundamentals you add on all your toppings. Salsa, peppers, cheese, etc. The great thing about these Mexican Zucchini Boats is that they’re highly customizable to you and your family. If there’s something you don’t like you can easily substitute it for something else. If there’s something you’d like to add that’s fine too! Make it how you like it and it’s sure to be a staple in your household. 🙂

Mexican Zucchini Boats

These Mexican Zucchini Boats are meatless and packed full of flavor!

  • 4 large zucchini
  • 1/2 large red onion diced
  • 1 red bell pepper cored and diced
  • 2 jalapeno pepper diced
  • 1 cup cooked brown or white rice (or riced vegetable)
  • 1 cup salsa (preferred level of spiciness)
  • 1 15 oz can black beans drained and rinsed
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon cumin
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • salt & pepper to taste
  • 1/2 cup fresh cilantro, chopped
  • 1 cup cheddar jack cheese


  1. Preheat oven to 400 degrees F. Grease a 9 x 13" dish then set aside. Slice each zucchini in half, length-wise, and core the middle with a spoon

  2. Heat the olive oil in a large skillet over medium heat. Once olive oil is hot add onions, red peppers and jalapeno peppers and cook for about 2-3 minutes 

  3. Add rice, salsa, beans, cumin, onion powder, garlic powder, cilantro, salt, and pepper. Stir all together and cook for about 5 minutes

  4. Spoon the mixture into each zucchini until they are full. Sprinkle each with cheese then arrange them in the baking dish. Cover with foil and bake for for 25 minutes. Take the foil off and set the oven on broil and let bake for an additional 5 minutes, until the cheese is nice and brown

  5. Enjoy!

Recipe Notes

I am very generous with my seasonings. Feel free to add more or less of the seasonings mentioned above to get the desired taste that you like
